Elevated modern Indian cuisine on Hunter Street
Newcastle’s foodie scene continues to evolve and has been recently graced by a delightfully delicious addition opening up in the former SUBO restaurant space – Calamari Kitchen & Bar.
Located on Hunter Street, this contemporary Indian restaurant offers a unique blend of traditional flavours infused with coastal influences, creating a dining experience that is a fusion of both the familiar and the exciting.
Owner Rahul’s journey from Mumbai to Pune, and eventually to Australia, is not just a tale of relocation but also a story of culinary passion and heritage. Raised in a family with a deep-rooted connection to hospitality, and with Rahul’s own background as a chef consultant, he brings a wealth of knowledge and tradition to Newcastle with Calamari Kitchen & Bar.
Rahul, alongside his wife and daughter, made the move to Australia in March 2023. Originally landing in Sydney, the young family have only recently set down their roots in Newcastle, arriving here in October last year.
The restaurant’s inception was rather serendipitous, with Rahul having no intentions of opening his own restaurant.
“We came to Newcastle for a holiday for my wife’s birthday and we loved it so much I started looking for work here.”
This love for Newcastle turned into a business opportunity when Rahul stumbled upon the former SUBO space during a casual walk down Hunter Street.
“One day, my wife and I were just walking down Hunter Street and we saw this space and that it said for lease, so I just called up the agent. One thing led to another, and we got the place. It all happened quite quickly.”
The menu reflects Rahul’s culinary experience and his desire to fill a gap in the Indian restaurant market in Newcastle’s dining scene. Dishes like the Shellfish Broth, Aunty’s Fish Curry & Rice, and Homestyle Calamari highlight Rahul’s fusion of coastal and traditional Indian elements.
“Since we are located on the coast and so close to the water, the offering is contemporary Indian with a focus on coastal cuisine.”
Rahul’s commitment to authenticity is highlighted in his approach to spices, shipping spices directly from India for the Calamari team to make their own spice powders and pastes. This dedication to using genuine ingredients adds depth and richness to every dish.
Since its official opening on March 15th, Calamari Kitchen & Bar has already made a mark, drawing in crowds especially during weekends with its unique menu. Rahul’s dedication to maintaining authenticity while embracing a contemporary approach to Indian cuisine is evident in every aspect of the restaurant.
